본 연구에서는 2003년부터 2004년까지 동해, 서해 및 남해연안에서 채취하여 위판장에서 판매되고 있는 연안산 어류 총 53종 177개체에 대한 중금속 함량을 분석하였다. 인증표준물질(certified reference material, CRM)을 사용한 각 중금속에 대한 회수율은 평균 88.7~100.6%로 Codex에서 요구하고 있는 수준에 부합하였다. 어류의 중금속 함량(생물기준)은 아연이 8.981±4.835 ㎍/g으로 가장 높았으며, 다음으로, 구리 0.755±0.507 ㎍/g, 망간 0.433±0.699 ㎍/g, 크롬 0.206±0.181 ㎍/g, 니켈 0.081±0.110 ㎍/g, 납 0.038±0.046 ㎍/g, 카드뮴 0.017±0.023 ㎍/g 순이었다. 한편, 우리나라 국민의 어류를 통한 중금속의 1일 섭취량은 각각 카드뮴 0.81 ㎍, 크롬 9.98 ㎍, 구리 36.63 ㎍, 망간 21.01 ㎍, 니켈 3.93 ㎍, 납 1.84 ㎍ 및 아연 435.58 ㎍이었다. 이는 FAO/WHO에서 설정한 잠정주간섭취허용량인 PTWI와 비교해보면, 카드뮴 1.35%, 구리 0.12%, 납 0.86% 및 아연 0.73% 수준이었다. 따라서 우리국민이 어류를 통해 일주일에 섭취하는 카드뮴 및 납의 함량은 PTWI의 0.86~1.35%에 해당되며, 이들 유해 중금속 함량은 매우 안전한 수준인 것으로 판단된다.
We collected 177 fishes representing 53 species of fish from the eastern (Pohang), western (Gunsan), and southern (Tongyeong) coasts of Korea, and measured their heavy metal contents. The mean recoveries of the heavy metals extracted from cod muscle (certified reference material, CRM) were 88.7~100.6%. The mean levels of the heavy metals in the samples taken from the edible portion of each fish were high in the order of Zn (8.981±4.835 ㎍/g), Cu (0.755±0.507 ㎍/g), and Mn (0.433±0.699 ㎍/g), which are necessary metals in the human body, and then followed by Cr (0.206±0.181 ㎍/g), Ni (0.081±0.110 ㎍/g), Pb (0.038±0.046 ㎍/g), Cd (0.017±0.023 ㎍/g). The average daily intakes of the heavy metals by the fishes were as follows: Cd (0.81 ㎍), Cr (9.98 ㎍), Cu (36.63 ㎍), Mn (21.01 ㎍), Ni (3.93 ㎍), Pb (1.84 ㎍) and Zn (435.58 ㎍). The average weekly intakes of Cd, Cu, Pb and Zn by the fishes were 1.35%, 0.12%, 0.86%, and 0.73% respectively, as compared with PTWI (Provisional Tolerable Weekly Intakes) established by FAO/WHO Expert Committee for Food Safety Evaluation.
