چکیده

از جمله مواد افزودنی که در صنعت غذا به‌طور وسیع برای بهبود کیفیت فراورده‌های غذایی استفاده می‌شوند، هیدروکلوئیدها هستند که نقش‌های متفاوتی در غذاها دارند، مانند غلیظ‌کنندگی، پایدارکنندگی، ژل‌دهندگی و اصلاح‌کنندگی بافت. اخیراً تقاضا برای هیدروکلوئیدها با خواص عملکردی ویژه افزایش یافته است، بنابراین یافتن منابع جدید صمغ با ویژگی‌های مناسب برای استفاده در صنعت غذا اهمیت ویژه‌ای دارد. در این مطالعه اثر توان، دما و زمان ماکروویو و فراصوت بر کیفیت و کمیت موسیلاژ شکر تیغال استخراج شده بررسی شد. بالاترین میزان استخراج موسیلاژ با ماکروویو 99/54 درصد طی 50 دقیقه و توان 350 وات و دمای 65 درجه سلسیوس است. مشاهدات نشان می‌دهد که با افزایش توان و دمای ماکروویو، مقدار موسیلاژ افزایش پیداکرده است. بالاترین میزان استخراج با فراصوت 54 درصد در توان 150 وات، دمای 60 درجه سلسیوس و زمان 20 دقیقه بوده است. درنتیجه، استخراج با ماکروویو به‌عنوان روش بهینه استخراج موسیلاژ شکر تیغال نیش‌دار انتخاب شد.

Comparison of Efficiency and Extraction of Mucilage from Echinops Pungens Trautv. Manna by Different Extraction Methods

چکیده [English]

Hydrocolloids, playing different roles including thickening, stabilizing, gelling and improving texture of foods, are among additives widely used for improvement of quality in food industry. Recently, demand for hydrocolloids with special functional properties has grown, so finding new sources of gums with proper attributes is of enormous importance. In this work, the effects of microwave and ultrasound power, time and temperature on the yield and quality of extracted mucilage from trehala manna were studied. The highest total amount of mucilage yield for microwave was found to be 54.99 % for 10.5 min of extraction at 90 W and 45C. It was observed that yield increased with an increase in microwave power and temperature. The highest yield (54%) for sonication was 150 W, time of 20 min in 60C.As a result, microwave extraction was selected as the optimal extraction method of trehala manna mucilage. The quality and quantity of sugary compound analyzed by high-performance anion exchange chromatography with pulsed amperometric detection.
