Abstract:
The aim of this work was to study the effect of the hydroponic cultivation of Crocus sativus L. kept to different environmental controlled conditions on the quality of saffron. The corms were kept in ULO (ultra low oxygen) cooling chambers for 40 and 70 days and followed by different incubation times (0, 30 and 60 days). The saffron quality was determined according to ISO 3632 (2011) and the concentration of the main saffron metabolites was assessed by HPLC-DAD. The cold storage and the incubation time provided a negative effect on the quality parameters studied. The corms of Crocus sativus L., through the combination of cold and incubation storage, were able to produce saffron from October to January, but only provided a similar quality to traditional saffron those obtained until December.
