Abstract.
Weak-interaction rates play an important role in the birth of neutron stars in core collapse supernova and their subsequent thermal evolution. In this paper, I highlight the role of strong interactions and phase transitions in calculations of neutrino scattering and emission rates in dense stellar matter.
