    One study in which intact gluten was used instead of the usual wheat gluten treated with chymotrypsin to mimic the effect of digestion failed to see stimulation of peripheral blood mononuclear cells (PBMC).117 Several findings3 such as strong stimulation by wheat peptides of PBMC from young T1D adults,94 previous reports that newly diagnosed young children with T1D but without celiac disease displayed increased titers of anti-gliadin antibodies,118 and the finding that early exposure of high-risk infants to gluten increased the risk of islet autoimmunity and T1D119 support this notion. Additional studies indicate a role for wheat-based diets in diabetes-prone rats,3,8,12 mice,3,48,120 and humans.66,69,73,112-115
