Abstract

Muscle and bone distribution was examined in 11 mature Double Muscled and 12 mature normal muscled (Beef Synthetic) cows which were slaughtered between 470 and 620 kg liveweight. Expressed as a percentage of total side muscle significant differences between Double Muscled and normal cows were found in 42 of the 95 muscles and in four of the nine anatomical muscle groups. In Double Muscled carcasses there were shifts in muscle weight distribution towards the more fleshy, expensive and superficial muscles. Double Muscled cows had proportionately less muscle in the distal hindlimb, distal forelimb, deep muscles in the thicker parts of the carcass and neck muscles than normal cows. Muscular hypertrophy revealed an increasing inner-outer gradient across the muscle layers, with the superficial and bulkiest muscles being the most hypertrophied.

The humerus, carpus and os coxa of the Double Muscled cows formed lower proportions of total bone weight than they did in normal cows. Along the vertebral column Double Muscled cows had greater percentages of lumbar and thoracic vertebrae than normal cows but a smaller percentage of cervical vertebrae though the differences were not significant (P > 0.05).

Résumé

On a étudié la répartition du muscle et de l'os chez 1 1 vaches adultes culardes et 12 normales qui ont été abattues à un poids vif de 470 à 620 kg. On a observé des différences significatives pour 42 des 95 muscles, les valeurs étant exprimées en pourcentage de la totalité des muscles d'une demi-carcasse. Les carcasses des culardes ont tendance à présenter une proportion plus élevée des muscles les plus charnus, les plus chers et les plus superficiels. Les vaches culardes ont proportionnellement moins de muscle dans la partie distale des membres arrière et avant, dans les muscles profonds des parties les plus épaisses de la carcasse et dans les muscles du cou. L'hypertrophie musculaire suit un gradient de l'intérieur vers l'extérieur à travers les couches musculaires, les muscles externes et les plus volumineux étant les plus hypertrophiés.

Chez les vaches culardes l'humérus, le carpe et la hanche représentent une proportion plus faible du poids total du squelette que chez les vaches normales. Les pourcentages des vertèbres lombaires et thoraciques sont plus élevés chez les vaches culardes et ceux des vertèbres cervicales plus faibles, bien que pas de façon significative (P > 0.05).

Zusammenfassung

Die Verteilung von Muskeln und Knochen wurde an 1 1 ausgewachsenen Doppellender und 12 normal bemuskelten (synthetischen Rindern) bei der Schlachtung mit einem Gewicht von 470–620 kg, erhoben. Ausgedrückt als Prozent der gesamten Flankenmuskeln wurden zwischen den Doppellendern und den normal bemuskelten Kühen bei 42 von 95 Muskeln und bei 4 von 9 anatomischen Muskel Gruppen signifikante Unterschiede gefunden. Bei den Schlachtkörpern von Doppellendern wurde ein Trend des Muskelgewichtes hinzu fleischigeren, grösseren und oberflächlicheren Muskeln gefunden. Doppellender Kühe hatten proportional weniger Muskeln an der distalen Hinterhand und der distalen Vorderhand als normale Kühe, sie hatten tiefe Muskeln in den dickeren Teilen des Schlachtkörpers und Nacken Muskeln. Muskuläre Hypertrophie ergab einen zunehmenden Gradienten von innen nach aussen über die Muskellagen, wobei die oberflächlichen Muskeln und die dicksten Muskeln am hypertrophsten waren.

Humerus, Carpus und Coxa Knochen der Doppellender Kühe wiesen geringere proportionen an gesamt Knochengewicht auf, als die normalen Kühe. In der Wirbelsäule hatten Doppellender Kühe grössere Anteile von Lenden- und Brustwirbeln als normale Kühe, aber kleinere Anteile Halswirbel; dadurch waren die Unterschiede nicht signifikant (P > 0.05).
