2022, Fungal BiologyCitation Excerpt :Two different S. cerevisiae strains were used as controls, the commercial baker's yeast strain (Calsa, Tucumán, Argentina) usually used as the starter culture for ethanol fermentation in the northwestern region of Argentina and S288C (laboratory strain), obtained from the World Bank of Cell Collection (ATCC). The first identification of the isolates was carried out using four different culture media (Jespersen and Jakobsen, 1996; Taylor and Marsh, 1984; Van Der Aa Kühle and Jespersen, 1998; Jespersen et al., 2000). These culture media allow detecting physiological characteristics typical of wild yeasts but absent in the metabolism of S. cerevisiae strains used as starters, such as variation in nutritional factors (carbon or nitrogen sources) or resistance to selective chemicals such as antibiotics or dyes (Ceccato-Antonini 2010).

2022, International Journal of Food MicrobiologyCitation Excerpt :Interestingly, unlike other commercially-available wine yeast, P. kluyveri loses its viability during the freeze-drying process and requires ultra-cooled storage facilities. A large collection of differentiation media exist that can, with a certain amount of reliability, assist in the speedy isolation of specific yeasts from any environment (Beuchat, 1992; Jespersen and Jakobsen, 1996). Such a type of media has not been developed for these film-forming Pichia spp. (Vicente et al., 2021).
