Abstract

The chemical structures of two major anthocyanins in purple sweet potato, Ipomoea batatas cv Yamagawamurasaki, have been identified as 3-caffeylferulysophoroside-5-glucosides of cyanidin and peonidin by FAB-MS and NMR.
