Analysis of the soluble proteins in grape musts by reversed-phase HPLC

Summary

Reversed-phase high performance liquid chromatography (RP-HPLC) was applied to the analysis of the soluble proteins from grape musts, with protein separation based on hydrophobicity. The initial percentage and rate of increase of organic modifier were optimized using the Modified Simplex method. Both the qualitative and quantitative data in the chromatograms yielded information on the variety origin of grape musts.
