It was recognized by Wasan and colleagues [2,4,36] that the presence of such a kinetic barrier can have significant implications for the stability of concentrated systems of dispersed colloidal particles (or emulsion droplets) with respect to their coagulation (or coalescence). A widely used ingredient for making and stabilizing dairy-type emulsions under neutral pH conditions is sodium caseinate.

The effective interaction potential between fat (oil) particles (droplets) in the presence of casemate submicelles was determined from the measured structural factors.
