國內推行食品履歷消費者接受度之研究

摘要


本研究旨在建構二項羅吉特模式探討國內消費者面臨食品履歷產品之選擇行為與接受程度。由文獻回顧得知,目前多朝食品履歷對公司之貢獻、對食品鏈產生之效益與消費者願付價格角度等進行研究,從需求面角度進行探討較少。且考量二項羅吉特模式隱含將所有決策者視為同質性且無差異之缺點。 因此,本研究從需求面角度探討影響消費者對食品履歷接受度之因素,並將二項羅吉特模式中改採變數間之交互作用,以表達出決策者之異質性。再利用敘述性偏好法設計問卷,以探討消費者對食品履歷之基本認知、對食品安全、衛生與健康之關心程度、價格面、生活型態與社經變數等對消費者選擇行為之影響,並以食品種類為區隔樣本之依據,藉此探討不同產品特性影響消費者選擇具備食品履歷之因素差異。最後分析價格屬性對不同群體消費者之影響。 研究結果指出,價格為主要影響消費者選擇具備食品履歷產品之影響因素,其次為消費者關心程度與基本認知等。且具有異質性之消費者,較易因食品履歷之價格變動而影響其選產品有履歷之機率,其中以對收入較高者而言,呈現正向影響。最後,針對保存期限短且需冷藏之產品特性而言,其是否具備食品履歷,對普遍消費者之影響程度較高。

This study aims to construct a binary logit model which considers consumer acceptance and choice behavior in Taiwan when they consume foods with the food traceability. Based on the prior literatures on food traceability, most of them focused on the contributions of food traceability for companies, the benefits for food chains, or the price that consumers are willing to pay. There are few literatures putting their emphases on the demand aspects. Moreover, the binary logit model implies that all of decision makers are as homogeneous which is a drawback. Therefore, this study discussed the factors which are associated with consumer acceptance of foods with food traceability from the demand perspective. Moreover, this study changed to adopt interaction between variables in the binary logit model to represent the heterogeneity of decision makers. This study used the stated preference method to develop the questionnaire to explore the consumers’ basic knowledge of food traceability, the concern level of food safety, food hygiene, and personal health. Furthermore, this study also took the price, personal lifestyle and socio-economic variables as the factors which have impact on consumers’ choice behavior. Based on samples which are classified by the types of foods, this study explored the impact of different types of foods on consumer choice of foods with food traceability. In addition, this study also considered the price effects on different groups of consumers. The results indicated that the major factor which affects consumers’ choice behavior is the price of foods with food traceability. The less important factor is concern level and basic knowledge for foods. Moreover, the price of foods affects the probability of heterogeneity consumers to choose foods with food traceability. For those people who have higher incomes, the results present the positive effects. Furthermore, general consumers prefer to choose foods with food traceability when these products have short storage life and require refrigeration.
