Abstract
Post mortem metabolism of pig muscles represents a pivotal area of research, in that pig meat quality is largely influenced by biochemical changes arising soon after slaughter. Metabolic rate and, in particular, forcedly anaerobic glycolytic fluxes in post mortem muscles are indeed correlated with the final meat quality outcome, especially in the light of the negative influence of a rapid pH drop in the determination of the so-called Pale Soft Exudative phenotype.
