Abstract:
The cherries arriving at the packing house are dropped into a pool of water at 0°C. The stems of the cherries are cut off and the fruits are selected and classified according to shape, and packed in modified atmosphere packaging (MAP). Hydrocooling is one of the quickest and the most effective methods for cooling cherry, and showering is the preferred system (Webster et al., 1996).

The structure of the MAP films is of very low density, and the films are sterile and free of humidity (Beaudry, 1995; Kupferman et al., 1995; Bahar et al., 1997).
