CELL WALL CHARACTERISATION OF CRACKING-AFFECTED 'SNOW QUEEN' NECTARINES

Abstract:
In this work, samples of both intact and cracked ‘Snow Queen’ nectarines were commercially harvested in order to elucidate if there were differences in cell wall composition and some cell wall-related enzyme activities. Results showed that the amount of cell wall material was similar in both cases. In contrast, yields of fractions containing covalently-bound pectin and matrix glycans were significantly lower in cracked nectarines, and lower contents of uronic acids in covalently-bound pectin was also observed. Changes in cell wall composition were not directly related with modifications in any of the cell wall-related enzyme activities assessed, thus suggesting that predisposition to suffering cracking may arise from differences in cell wall metabolism during the early stages of fruit ripening.
