Abstract: Aimed at improving the utilization of crab,studied the hydrolysis of crab waste by trypsase and flavourzyme.On the basis of one-factor-at-a-time experiments,the effect of hydrolysis tempersture,pH,enzyme dosage and hydrolysis time on hydrolysis degree was explored to optimize the hydrolysis conditions of crab protein through Box-Benhnken response surface analysis on the basis of single-factor experiments.The optimal hydrolysis temperature,pH,enzyme dosage and hydrolysis time were found to be 50 ℃,7.5,1200 U/g,4 h,add trypsase fist,then add flavourzyme after 1.2 h,compound ratio of 2:1,water-to-material ratio of 3:1,Under these optimal hydrolysis conditions,the pre-dicted hydrolysis deress was 26.22%,which was consistent with the average of three replicates of 26.01% obtained in the validation experiments.
