Abstract: The dehydration characteristics of banana slices during thinner-layer hot-air drying were investigated in theis paper.The moisture content and drying velocity of banana slices were determined under different drying conditions including thickness,air temperature and traying density.The drying curves and drying velocity curves were established.The dehydration characteristics of banana slices under different drying conditions were obtained.
