Study of soybean peptide new production technologyChinese Full Text

Abstract: soybean separation protein was used as material to optimazate the new production technology which two soybean peptides were producted at the same time through study of enzymatic processes.The results show that the optimum technology conditions were:product A hydrolysis time 4 h,system pH8.0,temperature 60 ℃;and product B hydrolysis time 3.5 h,system pH8.5,temperature 55 ℃.In addition,the molecular weight of the product A and product B was about 440 u and 650 u,respectively.
