Changes in Ascorbic Acid Contents and Related Enzyme Activities during Fruit Development of Late-Maturing Navel OrangeChinese Full Text

Abstract: In this research, ascorbic acid(AsA) content and enzyme activities in peel and pulp of navel orange(Citrus sinensis cv. ‘Powell’) were investigated during fruit development. The results showed that total AsA(T-AsA) and AsA contents in peel were higher than those in pulp, the accumulation of T-AsA and AsA during fruit development showed a similar tendency. In peel, the variation of L-galactono-1,4-lactone dehydrogenase(GalLDH) activity coincided with the accumulation rates of T-AsA and AsA, and presented significant positive correlation between the GalLDH activity and AsA accumulation rate, while in pulp, GalLDH activity almost kept constantly during fruit development. The activities of ascorbic acid oxidase(AAO), ascorbate peroxidase(APX), dehydroascorbate reductase(DHAR) and monodehydroascorbate reductase(MDHAR) in the peel were higher than those in the pulp during fruit development. Correlation analysis indicated that the AsA concentration in the peel was mainly determined by GalLDH activity, but in the pulp the AsA content may depend on the regulation of AsA regeneration capacity.
