ABSTRACT

Introduction In the processing of grain, milling is often the first step. It is one of the oldest industrial processes and is commonly used to refine barley, rye, maize, oats, millet, rice, sorghum, and wheat. Although this chapter will focus on wheat, the principles of milling are similar for the different grains. No attempt will be made to describe the milling process in detail. After a brief description, some of the different sciences that are relevant to an understanding of the milling process will be introduced.
