ABSTRACT

As one of the three most popular drinks in the world, coffee is one of the commercial crops being researched in depth for its chemical components and bioactivities. In the past few years, Yunnan Coffea arabica (YAC) became an important agricultural crop, which has been developed rapidly, and the planting area has now reached 120,000 hectares. YAC is recognized around the world for its complex chemical contents and unique flavors. It contains numerous oily and fruity aromas, which give it a rich and smooth taste, but without bitterness. At the same time, research on the biological activity of the chemical components of YAC continues. In this chapter, the medicinal functions of YAC and the bioactive research progress of caffeine, chlorogenic acids, trigonelline, and other main ingredients in coffee are summarized. In addition, the chemical structure of the trace natural products that have been found in Yunnan arabica coffee and their related activities are also presented, particularly with a detailed summary of the diterpenes found in recent years.
