Usually, DNS-amino acid derivatives are considered stable for 2 weeks if samples are protected from light and stored at 4 °C (Márquez et al., 1986). Herein, the stability of DNS-GABA was confirmed by the reproducibility of the peak areas (RSD ≤2%) when the QC samples were protected from light and kept at 25 °C for 48 h.

Of all commercially available reagents, our attention was paid to DEEMM [28], FMOC [28,39], DNS-Cl [40,41], PITC [26,42], and OPA [43] agents. The time and manual complexity of the preparation of individual derivatives including the stability of the prepared derivatives as well as their suitability for HPLC determination of AAs in meads using spectrophotometric or fluorescence detection was evaluated.
