The erect panicle (EP) genotype is a germplasm resource that increases rice yield (Wang et al., 2009; Tang et al., 2017; Idowu et al., 2022).

Three major protein bands of the rice protein appeared at about 16, 25, and 38 kDa (Fig. 2, lane 1), respectively, corresponding to those reported previously for indica rice (Villareal and Juliano, 1978). As shown in lane 2 of Fig. 2, extrusion promoted an increase in the intensity and number of higher molecular weight bands in the TR samples near the top of the separating gel (60–130 kDa) compared to the OR samples.

Rice proteins account for 5–12% of dried endosperm by weight (Villareal & Juliano, 1978), and most of them are seed-storage proteins (SSPs). Rice SSPs consist of 80% or more of glutelin, 2–8% prolamin, 4–15% globulin, and 1–5% albumin (Houston, Iwasaki, Mohammad, & Chen, 1968).
