2020, Fisheries ResearchCitation Excerpt :The horse mackerel, Trachurus trachurus, is a pelagic fish that feeds on small fish and planktonic crustaceans, and may become infected with Anisakis spp. larvae by consuming euphasiids (small crustaceans) which are intermediate hosts of these nematodes (Smith, 1983; Adroher et al., 1996; Mattiucci et al., 2008). This fish species is a much appreciated species, being consumed in Spain, among other culinary preparations, undercooked, smoked, pickled or marinated (Illescas et al., 2008), which makes it a potential source of anisakiosis, with some human cases having been reported due to its consumption, mainly in Japan (Shirahama et al., 1989; Ikeda et al., 1989; Muraoka et al., 1996; Sasaki et al., 2003; Fujikawa et al., 2018). However, the dressing of these dishes with some essential oils is able to inactivate larvae (Hierro et al., 2004; Giarratana et al., 2014, 2017a, 2017b), being a potential solution to avoid the presence of live anisakids in marinated fish.
