Abstract

Spray coating and drying are two technologies widely employed in biotechnology respectively to entrap different substances and to protect particles. Though presenting different problems of operating conditions, experimental set-up and product applications, they are both included in the same class of physical procedures for encapsulation, relying on heat exchange and phase transition.
