Abstract
Long chain ammonium carboxylates are a kind of soaps but they are characteristic in their behavior, namely, they not only form anhydrous thermotropic mesophases at relatively low temperatures but they form lyotropic mesophases with water and another amphiphilic substance like normal alcohol at ordinary temperature. They are moreover weak electrolytes which can be considered polar molecules with pretty high dipole moments.
