Rheology and the swallow-safe bolus

Abstract

Competence in swallowing depends on the physical nature of ingested food and drink, and a person's ability to form a “swallow-safe” bolus. Here is discussed the role of bolus consistency in swallowing, since this has been found to be an important characteristic in evaluation and feeding therapy of dysphagic persons. A basic review of rheology, the study of the deformation and flow of materials, is presented with an emphasis toward quantifying that property of consistency of a bolus that can be safely swallowed by a feeding-impaired person.
